It’s here, it’s here, it’s here…my second most favorite time of year! Christmas is my favorite time of year, but let me tell you…avocado season is a very close second! And I’m lucky enough to live in Southern California where loads of yummy avocados are grown! Last week a friend gifted me about 20 avocados so it just felt like the right time to plan a week’s worth of avocado meals! And it was AH-mazing!!!
Monday – Sweet Potato Nachos from Two Peas and Their Pod
Tuesday – Taco Chicken Zucchini from The Gracious Pantry
Wednesday – Grilled Salmon with Avocado Salsa from The Cookie Rookie
Thursday – Chicken and Avocado Enchiladas from Gimme Some Oven

In an effort to make your dinner prep a little easier each day, here are a few things you can do at the beginning of the week to prep the meals…
*Cut up 1 1/2 pounds of chicken into bite size pieces for the Taco Chicken Zucchini
*Cook and shred 4 1/2 cups of chicken…if you’re looking to save time don’t forget that once you cook the chicken, you can shred it quickly in your KitchenAid mixer
*Cook the bacon and cut into pieces
