
Be Inspired: Lexi
I am beyond excited to introduce you to today’s Be Inspired feature…Lexi! I first “met” Lexi while I was working on removing processed foods from my diet and came across her blog Lexi’s Clean Kitchen. What I found was a super sweet blogger with yummy recipes…these On-the-Go Baked Egg Nests were the recipe that lead me to her blog and it was just more goodness from there! Lexi is a great inspiration to me and reminder that eating healthy doesn’t have to taste bad!
It is my hope that you leave this blog feeling inspired. Whether you spend 2 minutes reading the blog every month or check the blog on a daily basis, it is my hope that when you click away from my site you leave inspired. Inspired to try something new. Inspired to step out of your comfort zone. Inspired to embrace a new challenge. Inspired to make a difference. Inspired to dream big and chase those dreams. Inspired to live life a little bit different. Inspired to be the best you possible. This series introduces you to people and stories that inspire me and it is my hope that they will inspire you as well.
What dream are you currently pursuing?
Ah, that’s a loaded question! I think that my initial passion for cooking and helping people has developed into my dream! I love communicating with my readers and help them live allergy-free, without any limitations.
What is your biggest dream?
I’d love to write books that will be staples in the kitchen for families- and ones that will bring families together. I envision a mother and child cooking through my cookbook, messy chocolate and dough on the pages, and just having fun- all while making healthy, nutritious, good-for-you food!
What accomplishment are you most proud of in your life?
I am most proud of making the plunge to dive right into my masters after college despite obstacles that crossed my path at the time, then taking one of my passions (teaching) and moving to a new state. Now I am proud that I was able to create something from a passion that I truly believe in- and that is actually helping people every day!
Who has been an inspiration to you and how have they inspired you?
My brother is a huge inspiration to me. His work ethic, passion, and drive in every aspect of his life- along with his his insightful personality is something I think about and apply every day in various situations.
How do you handle obstacles that arise as you pursue your dreams?
Keep pushing! Not every thing is always perfect, and there will be things that come up and get in your way- but push through, always with a smile on. I spend time reflecting on the past but think mostly about the future, which always helps push through obstacles.
Can you share five interesting facts about yourself?
I studied fine art, art history, and psychology in undergraduate, and art education in graduate school.
I am ambidextrous.
Favorite indulgence… dark chocolate, or chips and salsa!
I am under 5′.
I used to have super blonde hair!
